9月のテキスタイルデザインは、茄子。
焼き茄子の香ばしさをいかした、秋味の“葛焼き”を作りました。吉野葛に、白餡、白味噌、焼き茄子を加えた生地を型に入れて蒸し、小麦粉をまぶして焼き目をつけます。
図案のサイズにに合わせて賽の目に切り分け、茄子紺色に染めた錦玉羹を絞り出して模様を描きました。キャラメリゼした焼き茄子と白味噌の相性が良い、風味豊かな葛焼きに仕上がりました。
September's textile design is "Nasu (a eggplant)".
We made autumn flavor "kudzu-yaki"(baked kudzu starch jelly), using the fragrant of grilled eggplants. It is made of kudzu from Yoshino, mixed with white sweetened bean paste, white miso paste and grilled eggplants. It is steamed in a pan, coated with flour, and baked until it gets burn mark. It is cut into cubes to fit the textile design and nasu-kon(navy blue) colored kingyokukan, agar-agar and sugar that was melted and chilled, is squeezed to decorate patterns on them. Caramelized grilled eggplants and white miso paste go great together; that makes them rich flavored kudzu-yaki.
