平成27年の「和菓子になったテキスタイルデザイン」のテーマは“野菜”。四季折々の野菜をポップなテキスタイルデザインで発表し、そこから御菓子をイメージしていきます。もちろん素材としても旬の野菜を取り入れていきます。SOU・SOU×亀屋良長による”野菜和菓子”をお楽しみください。
"Wagashi inspired by SOU・SOU's original textile design" in Heisei 27; the theme of this year is vegetables. We are going to release pop textile designs in the motif of vegetables for all four season. Of course, we are using seasonal vegetables in ingredients. We hope you enjoy "vegetable wagashi" made by "SOU・SOU × Kameya Yoshinaga".
"Textile Name:Konsai"
There are many kinds of konsai, root vegetables, which grow underground.
Orange colored carrots, soil colored potatoes and burdock roots, purplish red colored sweet potatoes,
white colored garlic and radish, and so on.
They also vary in shape from long and thin to round.
The only common thing in them are all heavy, I guess, because they're roots.
This is the last design of vegetable series for this year.
I felt it would be tough before I started, but actually I enjoyed making them.
師走のテキスタイルデザインは、根菜。金時人参とさつまいもを使い、野菜の味と食感を活かした和菓子を作りました。
金時人参は茹でて臭みを取ってから蜜漬けにし、柑橘系のリキュール「コアントロー」で風味を付けています。糖度を上げ、ねっとりと熟した果物のような食感にしています。
あんこは二重になっていて、金時人参と白餡を混ぜたものを卵黄とバターを加えたさつまいも餡で包んでいます。人参本来の甘みと、コクのあるさつまいもの味をお楽しみください。
December's textile design is about root vegetables. We took good points of them in taste and texture and made up this wagashi, using Japanese red kintoki carrots and sweet potatoes. We rid the carrot of its smell by boiling and soaked them in syrup. It is flavored with citrus liqueur, Cointreau. We enhanced the sweetness and made a sticky texture like a ripe fruit. There are two layers in sweet paste: sweetened white bean paste with kintoki carrot are wrapped by the sweet potato paste mixed with egg yolk and butter. You will find the sweetness of the carrots and rich taste of sweet potato. Please enjoy this unique wagashi.
